Description
A journey through four Swiss mountain landscapes
Discover four distinctive expressions of Swiss mountain cheesemaking in one carefully curated tasting flight. From the spruce forests of Entlebuch to cool maturation caves and the high pastures of Toggenburg, each cheese brings its own sense of place, texture and character.
The flight is led by Entlebucher Bergfichtenzauber, winner of the 2026 Swiss Cheese Awards category for semi-hard cheeses with flavouring additions. Creamy and gently spiced, its delicate spruce character makes an elegant starting point for a journey that moves through malt, rich mountain cream and concentrated cave-aged flavour.
What is included
- Entlebucher Bergfichtenzauber, approximately 300g — smooth and creamy with gentle spice and refined spruce notes.
- Entlebucher Hopfenbergkäse, approximately 300g — matured with regional beer and wrapped in spent grain for savoury depth and subtle malty character.
- Schnebelhorn, approximately 300g — raw cow’s milk enriched with extra cream and matured for around eight months for a buttery, aromatic profile.
- Althorn, approximately 300g — cave-aged for up to 14 months, with a firm texture, savoury intensity and a lingering Alpine finish.
- 33 Pieces of Cheese tasting journal — a pocket-sized Alpine Express edition with an easy flavour wheel for recording every discovery.
Four peaks, four personalities
Forest: Begin with Bergfichtenzauber and its creamy, subtly resinous spruce character.
Malt: Move to Hopfenbergkäse for gentle piquancy, savoury depth and a distinctive brewing story.
Summit: Schnebelhorn adds richness, fine crystals and the aromatic complexity of long maturation.
Cave: Finish with Althorn, the boldest cheese in the flight, matured in natural cave cellars for a clean but powerful finish.
How to enjoy your flight
Allow the cheeses to come towards room temperature before tasting. Try them in the order above, beginning with the more delicate Bergfichtenzauber and ending with Althorn. Add crusty bread, fresh pear and quince paste for a refined cheese board, or divide the flight across several occasions and use the included journal to record how each cheese develops.
A full-bodied white wine works beautifully across the selection. Hopfenbergkäse is particularly good with a crisp lager or amber ale, while Althorn can also stand beside a lighter red wine.
