Raclette Cheese

Raclette cheese is quintessential Swiss. It was mentioned in medieval texts from Swiss-German convents dating from as early as 1291, the founding year of Switzerland.

Raclette cheese is traditionally meant to be melted and served over boiled potatoes. However, many combinations are possible and the cheese also tastes brilliant eaten on its own, unmelted.
