This is probably the best raclette cheese you can find anywhere!
According to records kept in monasteries in the cantons Obwalden and Nidwalden, we understand that William Tell had tasted “Bratchäs”, as Raclette was still called at the time, in as early as 1291. In those days, Raclette cheese was melted on an open fire and the soft melted mass gradually stripped off onto a plate.
The younger generation has now taken over the knowledge and passion for the product. From the herbs found in the meadows north of the Alps, a unique product is made, that embodies Swiss tradition and culture. Raclette is a genuine piece of Switzerland.
This particular raclette originates from probably the best raclette producer in Switzerland in Giswil/Sarnen, Canton Obwalden. It is ripened in a transformed WWII military bunker providing the ideal environment to mature cheese.
Mild to medium in taste, this raclette melts superbly well without any signs of grease when heated. It is also nice to eat on its own, unmelted.
The excellent meltability of our classic raclette cheese is always convincing. Its typical spicy taste combined with its creamy and full-bodied consistency results in an absolutely harmonious overall package and should therefore not be missing from any raclette meal.
This raclette cheese is matured for at least 3 months and regularly rubbed with water to protect it from drying out. The ripening period has a significant influence on the taste and aroma of the cheese: the longer the cheese is stored and cared for, the spicier it becomes. The beautiful natural rind, which can be consumed without any problems, is obtained by storing the cheeses in the cellar on wooden boards.
The Raclette Gourmet cheese contains no lactose (less than 0.1 g / 100 g) and is rich in high-quality protein, essential amino acids, calcium and phosphorus. It is also a good source of vitamins A, D, B2 and B12.

How we wrap your cheese
The freshness of your cheese is our priority. That’s why — unless stated otherwise in the product description — we pack all cheeses in vacuum-sealed bags to protect them during their journey. We know some customers prefer the traditional touch of cheese paper wrap, so we’re happy to offer this option for a small fee, as it takes extra care and time to prepare.
Unless noted differently, all cheeses will generally have a best-before date of at least 14 days, and vacuum-packed cheeses around 2 months. Remember, with cheese this date is simply a guide — it doesn’t necessarily mean the cheese will be of lesser quality afterwards. In fact, many softer varieties reach their most delicious ripeness when enjoyed close to, or even just beyond, their best-before date.
How the cheese gets to you
At Alpine Express, we send all our cheeses in eco-friendly, insulated cardboard boxes, carefully cushioned with recycled packing paper and kept chilled with food-grade gel ice packs. We use the fastest service available — most often Star Track Express — so your cheese arrives in peak condition. You can check estimated delivery times using Star Track’s estimated transit time tool, though we may occasionally select another trusted courier to ensure the quickest, most reliable service.
Unless otherwise noted, we ship cheese boxes each Monday, with an order cut-off of 8 pm (Sydney time) the night before. As soon as your order is on its way, you’ll receive a tracking number so you can follow your cheese’s journey from our door to yours.
