A proper Swiss fondue is heart warming and an essential comfort food for all cheese lovers. This particular cheese mix is grated fresh in our local kitchen premises from 2 equal parts Gruyère AOP Classic and Vacherin Fribourgeois AOP. This mix is also known as ‘moitié/moitié’, or half/half in English.
Like a perfect Manhattan, this mix is simply the perfect combination of cheese. The Gruyère AOP Classic comes from 6+ months with a lovely salty base and the typical Gruyère aroma whereas the Vacherin Fribourgeois AOP brings a mild creaminess to the mix. Together they are simply divine.
This pack comes in a vacuum bag of 500g net, perfect for 2 to 3 people. Best before date will be a minimum of 3 weeks, can be frozen for up to 6 months.
All you need is to add white wine (best is a Chasselat grape, but that’s hard to find, so choose another dry yet aromatic white wine, e.g. a Pinot Gris from Tasmania and corn starch. The full recipe can be found here.
How the cheese gets to you
At Alpine Express, we send all our cheeses in eco-friendly, insulated cardboard boxes, carefully cushioned with recycled packing paper and kept chilled with food-grade gel ice packs. We use the fastest service available — most often Star Track Express — so your cheese arrives in peak condition. You can check estimated delivery times using Star Track’s estimated transit time tool, though we may occasionally select another trusted courier to ensure the quickest, most reliable service.
Unless otherwise noted, we ship cheese boxes each Monday, with an order cut-off of 8 pm (Sydney time) the night before. As soon as your order is on its way, you’ll receive a tracking number so you can follow your cheese’s journey from our door to yours.
