A proper Swiss fondue is heart-warming and an essential comfort food for cheese lovers. Our authentic Moitié-Moitié Fondue Mix is freshly grated in our Brisbane kitchen using equal parts Gruyère AOP Réserve (10+ months) and Vacherin Fribourgeois AOP – the traditional combination enjoyed throughout the French-speaking regions of Switzerland.
Known as moitié-moitié (French for “half and half”), this is widely regarded as the benchmark for a classic Swiss cheese fondue. Like a perfectly balanced cocktail, each cheese plays an important role. Our award-winning Gruyère AOP Réserve contributes a rich, nutty flavour with a beautifully savoury finish developed during more than 10 months of maturation, while the creamy Vacherin Fribourgeois AOP melts effortlessly to create the smooth, velvety texture that makes a truly exceptional fondue. Together, they create an authentic Swiss fondue that’s wonderfully rich, balanced and irresistibly moreish.
True to the traditional Swiss recipe, our Moitié-Moitié contains just two ingredients: Gruyère AOP Réserve and Vacherin Fribourgeois AOP. Nothing else. No fillers, no flavour enhancers and no lower-cost cheeses – just the authentic combination that has made Swiss fondue famous.
Each batch is carefully prepared by hand. We remove the rind where required, grate both cheeses fresh in our Swiss fondue grating machine, thoroughly blend them and immediately vacuum seal the mix to preserve freshness and flavour.
Available in 500g (serves 2–3 people) or 1kg (serves 4–6 people), each pack has a minimum best-before period of four weeks and can be frozen for up to six months.
To prepare, simply add a dry white wine (traditionally made from the Chasselas grape, although a quality Pinot Gris or other aromatic dry white works beautifully) together with cornflour. Follow our step-by-step recipe for the perfect Swiss fondue here or watch our video:
How the cheese gets to you
At Alpine Express, we send all our cheeses in eco-friendly, insulated cardboard boxes, carefully cushioned with recycled packing paper and kept chilled with food-grade gel ice packs. We use the fastest service available — most often Star Track Express — so your cheese arrives in peak condition. You can check estimated delivery times using Star Track’s estimated transit time tool, though we may occasionally select another trusted courier to ensure the quickest, most reliable service.
Unless otherwise noted, we ship cheese boxes each Monday, with an order cut-off of 8 pm (Sydney time) the night before. As soon as your order is on its way, you’ll receive a tracking number so you can follow your cheese’s journey from our door to yours.
