Description

Please note: This product is available during the Australian winter months only (ca. May to August).

As a genuine regional product, Vacherin Fribourgeois AOP is a subtle reflection of the entire palette of aromas of the flora found in the foothills of the Alps and on the Fribourg high plateau.

This cheese, which is a protected as a guaranteed brand, can be distinguished by its distinctive character. Vacherin Fribourgeois AOP takes a leading position amongst cheese specialities on account of its fine, melting, extremely sophisticated and pleasant smelling dough.

The cheesemakers in the canton of Fribourg are known for their great ability and passion for their profession. First, they treat the cow’s milk that is delivered to them each day in their village dairies – a high-quality, rich, fragrant raw material. The cheese is then made according to a traditional, unique original recipe.

This Vacherin Fribourgeois AOP rindless and perfect as a ‘melting’ ingredient. E.g. it gives the “half and half fondue” (half Gruyère AOP and half Vacherin Fribourgeois AOP) a thick creamy texture and pleasant taste. It is also fantastic as a combination with other cheeses in cheese toasties or gratins.

How to make a fondue without Vacherin Fribourgeois?

If this product isn’t available, but you’re still keen on making a gorgeous ‘moitié/moitié style’ fondue, we’ve got a suggestion for you. Instead of Vacherin Fribourgeois, try Swiss Raclette. It’ll give you a similar smoothyness and creaminess as the Vacherin Fribourgeois would have. We suggest a 60% Gruyère and 40% Raclette mix. Let us know if you give it a try and what you think!

How we wrap your cheese

The freshness of your cheese is our priority. That’s why — unless stated otherwise in the product description — we pack all cheeses in vacuum-sealed bags to protect them during their journey. We know some customers prefer the traditional touch of cheese paper wrap, so we’re happy to offer this option for a small fee, as it takes extra care and time to prepare.

Unless noted differently, all cheeses will generally have a best-before date of at least 14 days, and vacuum-packed cheeses around 2 months. Remember, with cheese this date is simply a guide — it doesn’t necessarily mean the cheese will be of lesser quality afterwards. In fact, many softer varieties reach their most delicious ripeness when enjoyed close to, or even just beyond, their best-before date.

How the cheese gets to you

At Alpine Express, we send all our cheeses in eco-friendly, insulated cardboard boxes, carefully cushioned with recycled packing paper and kept chilled with food-grade gel ice packs. We use the fastest service available — most often Star Track Express — so your cheese arrives in peak condition. You can check estimated delivery times using Star Track’s estimated transit time tool, though we may occasionally select another trusted courier to ensure the quickest, most reliable service.

Unless otherwise noted, we ship cheese boxes each Monday, with an order cut-off of 8 pm (Sydney time) the night before. As soon as your order is on its way, you’ll receive a tracking number so you can follow your cheese’s journey from our door to yours.
